For the Cupcakes:

  • Use your favorite yellow cake mix (from a box or from scratch)
  1. Bake according to package directions.

For the Cake Wash:

  • 1 cup water
  • 1 cup granulated white sugar
  • 1/4 cup Irish Cream liquor
  1. In a small saucepan, combine water and sugar. Stir over med-high heat until sugar is fully dissolved.
  2. Add Irish cream and stir until incorporated.
  3. Let cool completely before using.

For the Icing:

  • 3 cups whipped topping
  • 1/4 cup Irish Cream liquor
  • Green food coloring
  1. In a large mixing bowl gently combine whipped topping and Irish cream liquor with a wire whisk. Be careful not to over-whip.
  2. Set aside a portion for the filling and dye the remaining portion with a few drops of green food coloring.
  3. Place icing in a large pastry bag with a large star tip.

Put it all together:

  1. Using a cupcake punch or paring knife, remove the centers of the cupcakes and set tops to the side.
  2. Using a fork poke holes in the outer edge of each cupcake.
  3. Lightly brush the cake wash on the outer edge, punched out center, and the removed cake tops.
  4. Place a dollop of the reserved frosting in the center of each cupcake and replace tops.
  5. Starting from the outer edge and working your way into the center in a circular motion, pipe the green frosting onto each cupcake.
  6. Garnish with green or shamrock sprinkles, if desired.
