You voted aand now here it is. Our recipe for Irish Cream Cupcakes. Enjoy!
For the Cupcakes:
- Use your favorite yellow cake mix (from a box or from scratch)
- Bake according to package directions.
For the Cake Wash:
- 1 cup water
- 1 cup granulated white sugar
- 1/4 cup Irish Cream liquor
- In a small saucepan, combine water aand sugar. Stir over med-high heat until sugar is fully dissolved.
- Add Irish cream aand stir until incorporated.
- Let cool completely before using.
For the Icing:
- 3 cups whipped topping
- 1/4 cup Irish Cream liquor
- Green food coloring
- In a large mixing bowl gently combine whipped topping aand Irish cream liquor with a wire whisk. Be careful not to over-whip.
- Set aside a portion for the filling aand dye the remaining portion with a few drops of green food coloring.
- Place icing in a large pastry bag with a large star tip.
Put it all together:
- Using a cupcake punch or paring knife, remove the centers of the cupcakes aand set tops to the side.
- Using a fork poke holes in the outer edge of each cupcake.
- Lightly brush the cake wash on the outer edge, punched out center, aand the removed cake tops.
- Place a dollop of the reserved frosting in the center of each cupcake aand replace tops.
- Starting from the outer edge aand working your way into the center in a circular motion, pipe the green frosting onto each cupcake.
- Garnish with green or shamrock sprinkles, if desired.
